What You’ll Need To Make Cod Fish Cake
The ingredients to make Cod Fish Cake includes:
- 1 pound of fresh cod (no skin)
- Water to cover the cod above 1 inch
- 2 thick lemon slices
- 12 peppercorns
- 1 teaspoon of yellow mustard seeds
- 1 cup of sauteed chopped onions (sauteed in butter with 2 garlic cloves)
- 1 large egg
- 3 tablespoons of mayonnaise
- 2 teaspoons of Dijon
- 1 teaspoon of Worcestershire
- 1 tablespoon of fresh dill
- 2 teaspoons of old bay
- 1 cup of saltines crushed
- Salt and pepper
- 1 cup of panko for the outside crust
- 3 tablespoons of olive oil
- 2 pads of butter
How To Make Cod Fish Cake
Step 1: Take the fresh cod and place in the pan. Fill the pan with cold water until it reaches the top of the cod then add the lemon slices, peppercorns, and mustard seeds. Bring the cold water to a slow simmer for 6-8 minutes.
Important Tip: the water should not be a hard boil or the fish could get chewy.
Step 2: Remove the fish from water and drain all the liquid from the cod & remove all peppercorns and lemon.
Step 3: Saute your onion and garlic in butter for a few minutes until translucent.
Step 4: In a large bowl, mix together the egg, worcestershire, mayonnaise, fresh dill, and old bay seasoning. Whisk them all together until all the wet ingredients are combined. Add the cooked cod with the sauteed onions, garlic, and crushed saltines with salt and pepper. Softly mix until all is incorporated.
Step 5: Form 4 patties. Place in the fridge for 30 minutes to set. Pat the panko crumbs on both sides of the patties for that extra crunch.
Step 6: Fry the fish cakes in a combination of olive oil and butter for 4-5 minutes on one side and then 3-4 minutes on the other side until cooked. Remember the fish was already cooked through.
